Dr. Eshun, Guy
Biography
Guy Eshun is a lecturer in Food and Nutrition at the University of Education, Winneba. Guy Eshun is interested in profiling the amino acids and fatty acids in Ghanaian underutilized legumes, development of Weaning diets from locally available raw materials, functional properties of flours from locally available raw materials. Guy Eshun holds Dr. rer. nat. degree with a specialization in Food Chemistry from Universitaet Wuerzburg, MSc. Food Science and Technology and BSc. Chemistry from the Kwame Nkrumah University of Science and Technology in Kumasi, Ghana.
Guy Eshun has supervised several postgraduate and undergraduate projects since his appointment as a lecturer at the University of Education, Winneba.
AWARDS: DAAD (Deutscher Akademischer Austauschdienst)/GHANA GOVERNMENT scholarship for doctoral study in Germany (2014).
